    Avocado Tuna Salad 

    A perfect low-carb and healthy lunch option, this avocado tuna salad comes together in just 10 minutes with a combination of fresh veggies and herbs and pantry staple canned tuna.

    This healthy tuna salad features crisp cucumbers, fresh parsley and dill, lemon juice and zest, crunchy celery, and albacore tuna packed in oil.  There is no mayo in this tuna salad, rather it gets its creaminess from avocado and olive oil.

    The oil-packed tuna ensures this tuna salad is not dry.  If you have the water-packed tuna, that is fine as well, you may have to add just a touch more olive oil to the salad to keep it moist.

    The salad comes together quickly, making it a perfect option for a budget-friendly and quick lunch or dinner.

    Ingredients in Avocado Tuna Salad

    • 2 5 oz cans tuna, drained (I like solid white albacore in oil)
    • 2 Signature Farms mini cucumbers (Persian cucumbers, or 1 English cucumber) sliced
    • 2 avocados, chopped
    • ¼ cup red onion, diced
    • ¼ cup celery, chopped
    • 1 tablespoon fresh dill, minced
    • 1 - 2 tablespoons fresh parsley, minced
    • 2 tablespoons extra virgin olive oil
    • 1 lemon (juice and zest)
    • 1 lime, juiced
    • 1 teaspoon salt
    • ¼ teaspoon freshly cracked black pepper

    How to Make Avocado Tuna Salad

    In a large salad bowl, combine drained tuna, sliced cucumber, sliced avocado, diced red onion, diced celery, 1 tablespoon of diced dill, and 1-2 tablespoons of chopped parsley.
    Drizzle salad with 2 tablespoons olive oil, 2 tablespoons lemon juice, 1 tablespoon lime juice, 1 teaspoon salt, and ¼ teaspoon freshly cracked black pepper (or season to taste).
    Toss to combine and serve.
