Strawberry Watermelon Salad With Tomatoes and Mint
Light, refreshing and delicious, this strawberry watermelon salad with tomatoes and mint offers the ultimate flavor explosion for spring and summer. The perfect entertaining salad for summer BBQ's when strawberries and watermelon are at their peak of freshness.
While a watermelon feta salad is popular in the Mediterranean, adding fresh strawberries and ripe, juicy tomatoes adds color, texture, and nutrition. You could easily add feta cheese to this salad if you wish for a pop of salty, creamy texture.
Ingredients in Strawberry Watermelon Salad
Salad
- 1 cup cherry or grape tomatoes, halved
- 2 cups watermelon, cubed
- 1 ½ cups strawberries, quartered
- 2 tablespoons fresh mint, thinly sliced
Dressing
- ¼ cup olive oil
- 1 ½ tablespoons balsamic vinegar
- ½ tablespoon fresh lemon juice
- ½ teaspoon sugar or maple syrup
- 1 clove garlic, smashed
- sea salt and freshly ground pepper, to taste
To prepare the salad, slice the watermelon into ½-inch cubes and place it into a large serving bowl or platter. Top with sliced strawberries halved tomatoes and fresh julienned mint.
Prepare the dressing by combining the olive oil, balsamic vinegar, lemon juice, sugar, smashed garlic clove, salt, and pepper in a mason jar with a lid. Shake vigorously with the lid on until combined.
Drizzle the dressing onto the salad just before serving, reserving the garlic clove in the jar.
The salad can be prepared a day in advance, but do not dress it until right before serving as the fruit will absorb the dressing and it can become soggy over time.
