    Blood Orange Glazed Salmon

Slow Roasted salmon is topped with a sweet blood orange glaze with ginger, soy, and honey.  It's a delicious flavor combination that is finished off with toasted pistachios and fresh basil.  Serve with couscous and a salad for a delicious weeknight dinner.

For this recipe, we are slow roasting the salmon, which results in a luxuriously silky and buttery texture.  The fat and omega 3 fatty acids stay in the salmon rather than seeping out in the form of the white albumin that you see when you overcook salmon.  It's simply the best way to cook salmon if you have the extra time.

The salmon is marinated in a sweet honey blood orange miso sauce that infuses the salmon with flavor before it hits the oven.  It's then glazed with a sticky and sweet orange honey glaze and popped under the broiler to let the glaze caramelize for just a minute.  The result is a luscious salmon with honey orange, ginger notes that the whole family will love!

    Ingredients in Orange Glazed Salmon

    • salmon
    • olive oil
    • salt and pepper
    • soy sauce
    • honey
    • 1 tablespoon fresh ginger
    • 2 cloves fresh garlic, minced
    • 1 tablespoon miso paste
    • ½ cup blood orange juice, freshly squeezed (2 blood oranges)
    • 1 blood orange, thinly sliced
    • 2 tablespoons roasted pistachios, chopped
    • fresh basil, for garnish

How to Make Blood Orange Glaze for Salmon

Preheat the oven to 300° F.

Place the salmon in a shallow parchment-lined baking dish.   Brush with olive oil and season with salt and pepper.  Place thinly sliced blood orange slices over the salmon.

In a small saucepan, combine soy sauce, honey, miso paste, ginger, garlic, and blood orange juice.  Heat over medium heat and stir often until the miso paste dissolves and creates a smooth marinade.  Pour half of the marinade over the salmon in the shallow baking dish.

Let the salmon marinate for 30 minutes.

Reduce the remaining blood orange glaze by half in the saucepan for 10 minutes over medium heat until the liquid has a thick, glaze-like consistency. Remove from the heat.

Bake the salmon low and slow for 25 to 30 minutes at 300 degrees.  This will result in a luxuriously silky, buttery texture for the salmon.

Once the salmon is finished cooking, brush the blood orange glaze on top of the salmon, sprinkle with the chopped pistachios and pop it under the broiler for 2 minutes to help the glaze get a gorgeous caramelized color and texture.
