Ingredients

  • 1 small-medium avocado pitted and finely diced (about ⅔ cup)
  • 1 small-medium mango finely diced (about ⅔ cup
  • ½ red bell pepper diced
  • 2 tablespoons lightly packed fresh cilantro leaves rinsed and finely chopped
  • 3 tablespoons finely chopped red onion
  • 1 ½ tablespoons lime juice
  • 1 ½ tablespoons extra virgin olive oil

Instructions

  • Combine mango, red onion, avocado, cilantro, red bell pepper, lime juice, and olive oil in a medium bowl.  Stir to combine.
